Homemade Granola


I LOVE GRANOLA!!!

I love this granola, I usually take in a bag and bring it to work and snack when I'm feeling hungry in between meals!

What You'll need:

1 cup of oats (Not quick oats)
2 tablespoons of peanut butter
2 tablespoons of honey
1/4 teaspoon of cinnamon
1/4 teaspoon of vanilla extract 

*you can change the measurements depending on what you like i added a little extra of everything*

Directions:
Preheat oven to 325 degrees.
spray cookie sheet with non stick cooking spray.
Combine peanut butter and honey in a bowl, microwave until peanut butter becomes creamy.
Add cinnamon and vanilla into peanut butter mixture and stir.
pour oats into mixture and stir until oats are covered!
spread oat mixture evenly on cookie sheet.
Cookie for 5-8 minutes, let cool until granola is crunchy.

ENJOY.

I always make this in bulk
You can never have too much oats:)


Quick healthy Lunch


This is my go to lunch when I am in a rush!
Its quick, easy, tasty and filling:)

Rice cake:

You'll need a rice cake of your choosing (I usually get caramel flavored rice cakes)
Peanut butter
Chia Seeds 

Smear everything on the rice cake and VOILA! 


Green Smoothie:
Their are SO many variations of a green smoothie! I try out so many and have yet to find one i didn't like!

You'll needs:

Spinach 
almond milk
Protein powder (optional)
Fruit of your choice (I chose half of a banana)
Chia seeds (optional)

Mix it all in the blender and your good to go!

                                                              What you'll need:
 
 
  • Tuna
  • Plain Greek yogurt (I prefer Chobani)      
 
 
Directions: 
 
SUPER EASY:)
 
Mix yogurt and tuna, their are no measurement! just add the yogurt until the tuna is to the consistency you like!
 
I always add onion powder, salt and pepper.
 
This taste great and I cant tell the difference, plus its healthy:)

Ingredients:
 
All you REALLY need for this recipe is eggs!
After that you customize it however you want!
 
 
I like to add sausage and cheese!
 
 
Directions:
In a small bowl add your eggs I usually do 4-6
 I also add ground sausage, cheddar cheese, milk, salt and pepper.
 Beat until its blended well.
Grease a muffin pan and add egg mixture, I usually add 1/3 cup into each muffin cup.
set oven to 350 degrees and cook for 20 minutes.
 
 
 
 
I love these, they are so simple and my family loves them.
My husband put them on an English muffin before work.
My son eats them also i microwave them and chop them up!
Their are so many ways to cook and eat these!

PB B & O Bars

Peanut Butter Banana & Oatmeal Bars
 
 
Oh my goodness I dont even know how to describe these!
They are soo yummy!!
I make them in bulk, so i always have them on hand!
Not to mention they are very healthy for you my 2 year old loves these so its nice to have a go to snack thats actually good for him!!
 
 
What you'll need:
 
 
 
1.5 cups of oats
1/4 cup of creamy peanut butter
1/2 cup of milk
1 banana
1 large egg
1/4 cup of brown sugar
1 tsp. of cinnamon
1 tsp. of vanilla
1/2 tsp. of salt
1 tsp. baking powder
 
 
Directions:
 
1)In a bowl Mix together oat, brown sugar, salt, cinnamon and baking powder.
2) Add in the vanilla, beaten egg, and milk blend ingredients together.
3)Add in mashed banana and peanut butter, blend ingredients well.
4) pour ingredients evenly into a 9X9 lightly greased pan.
 
 
5) Cook at 350 degrees for 20 minutes
 
 
 
 
You have a healthy, easy, and quick snack or breakfast for the whole family to enjoy!

Cowboy Casserole

Cheesy Cowboy Casserole
 
 
 
What you'll need:
 
 
1.5 LB of ground beef
1 bag of tater tots
1 small onion chopped
2 garlic cloves chopped
4 tablespoons of sour cream
1 can of cream of mushroom
1 can of whole kernel corn
1/2 cup of milk
Shredded cheddar cheese
 
 
Directions:
1) saute onions in sauce pan, when onions are done add garlic.
2)add meat into the sauce pan with garlic and onions, when brown set aside.
3)in a bowl mix together sour cream, cream of mushroom, and milk whisk until blended.
4) in a large bowl mix the ground beef, soup mixture,corn and 1 cup of cheese
5) Grease a 9X13 inch pan and layer tater tots on bottom.
6)pour mixture evenly over tater tots.
7) layer tater tots over mixture and sprinkle cheese on top.
8) set oven to 350 degrees and leave casserole in for 25-30 min.
 
 
 ( What it should look like right before going into the oven)
 
 
 
Finished deliciousness.
This meal was very easy to make!
Both my son and my husband loved it!

Cucumber Salad

Cucumber Salad
 
 
I am by NO means a healthy nut, but I am not junk foodie either! I try to eat healthy when possible but love to splurge often:)
This is a great light snack or lunch!
 
 
 
 
 
Ingredients:
Cucumbers
Carrots
Lemon Juice
Pepper
 
 
Directions:
Their are no real directions just mix ingredients with the amount you desire into a bowl and enjoy!

Cotton Candy Fizzle



Cotton Candy fizzle

 

 

After I had just moved to Washington, me and my neighbor went to downtown Olympia to get a drink I saw a cotton candy vodka and told the bartender to make me a drink that had a cotton candy taste! she made me what I have re created as Cotton candy frizzle! Its a must try I even had my husbands friends try it and they all liked it!

 

 



 


 
What you'll need:
 
 
Pinnacle Cotton candy vodka
7UP
Grenadine
 
 
Directions:
 
I really have no precise directions. I pour the vodka first that way i have a better indication of how much alcohol will be in the drink, then pour the 7UP and put a splash of grenadine.
 
Taste exactly like cotton candy and is super refreshing !
 
 
 
 
 



Zuppa toscano in Crock pot

 

Zuppa Toscana

 

This recipe is delicious, it would be perfect for a chilly night!

 
 
 
What  you'll need:
 
 

 
 
 
Ingredients:
1lb. Italian Sausage
6 pc. of bacon
3 potatoes
1 small onion
2 cups of whipping cream
2 cans of chicken broth (14 OZ)
Kale (optional)
red pepper to taste
salt and pepper to taste.
 
 
Directions:
 
 
1) Cook bacon in pan and then crumble, set aside.
2) Brown sausage in pan, lay cooked sausage on paper towel to absorb grease.
3)Peel and dice potatoes (don't put potatoes in crock pot until one hour before cooking.)
4) Dice and saute onions.
5) Put Chicken broth, heavy whipping cream, red pepper, salt and pepper, bacon, sausage and onion into crock pot.
 
Kale goes in about 10-15 minutes before cooking is done.
 
Set crock pot on high for 3-4 hours!
 
VOILA you have a tasty restaurant style soup!
